Small in surface (23 ha), the vineyard of Pissotte is very famous for its southern location and its uniqueness; on the first foothills of the Vendéen slopes siliceous-clayey prevalence - the " hillsides " of Pissotte benefits from exceptional sunshine (1600 h/an). |

For a product in harmony with the balance of nature, we maintain a plantation with high density (6000 vines per hectare). |
|
The outputs are modest (50-55 hl/ha). In winter, the pruning is voluntarily short to preserve the vines. The young plantations are cultivated for 4 years before producing. |
|
In order to limit yields, achieve appropriate maturity, and preserve the richness of the terroir, we avoid using chemical fertilizers, apply the technique of cluster thinning, sustained farming, biologically, where possible, but do not rule out the use of artificial treatment if necessary. |

Our wine is blended at the end of the wine making process: |

Light and smooth tasting (between 11 and 12°) never aggressive and always respectful of natural balance (absence of chemical stabilizing treatments); long tasting in mouth. |

Please note the particular care taken to separate the selection of juices: 1st selection at the harvest, 2nd pressing and 3rd selection after fermentations. |
